My husband and I shared cooking chores tonight. He browned the meat, while I chopped up the veggies and did the rest. It turned out beautifully, IMO.
And both kids actually ate it!!

Various dried mushrooms, noodles, tofu, and kimchi in a broth made with instant tom yum paste, with an egg stirred in.

Um... Sourdough with Nutella and crushed potato chips. Hahaha. I eat some weird stuff.

Slow roasted for almost two hours, they were soft, crispy and gorgeous. To go with them, I had some leeks and mushrooms, braised in the rendered pork fat and a parsnip/potato mash.

So my friend had told me about this amazing sandwich in Lake Charles, LA, and since I was passing through on my way from Baton Rouge to Texas, I decided to pick one up to-go. It's a Darrell's Special, and I was told to order it with mayo and gravy on the side, so it wouldn't get soggy, so that's what I did. However, I wanted to go ahead and eat the first half, so then I had to add the mayo and gravy on it in the car (don't worry, I did this in a parking lot).
The Darrell's Special is 3 meats (ham, turkey, roast beef) and 3 cheeses (American, Swiss, and Provolone). It's also supposed to have lettuce, but I nixed that.

Crock Pot Chicken with 40 Cloves of Garlic

Chicken with 40 Cloves of Garlic is an Internet favorite these days. Just about everyone has made it, and with good reason. When that chicken comes out of the oven, roasted with 40 cloves of golden, oozing garlic cloves and fragrant herbs and spices, the smell is almost heavenly, as is the taste. However, as easy as sticking something in the oven for hours may be, sometimes you just don't want to leave the oven on all day. For this reason, I decided that I could just use my crock pot instead. True, the skin isn't as crispy as it would have been in the oven, but I'm sure that it's a thousand times juicier, and the flavors meld together just as well as they would have in the oven, as they are contained in my little crock pot. The garlic becomes almost buttery after three hours in the pot with the chicken, herbs, olive oil, and white wine, and the chicken itself has the most delicious skin and juicy meat. My husband made mashed potatoes go to along with this, and we decided to remove from of the garlic cloves from the chicken and mash them up to add to the potatoes; a genius move on our part, I assure you. I made a gravy with the leftover juices and garlic by mashing the garlic through a mesh sieve and simmering the juices and garlic paste with a bit of butter. The leftovers for this meal were happily eaten the next day, and I will certainly continue to make this classic dish in my crock pot. Recipe after the cut or on my blog at The Crepes of Wrath.

This is one of those desserts that looks really impressive yet takes hardly any work at all - seriously! Most restaurants charge $6 or more for one serving but all you need are four basic ingredients, plus some fruit, and you have yourself one fancy looking treat for a fraction of the cost.
